Meet Pennie McCoy
Founder of Nurture Nourish Evolve
Accredited Practising Dietitian
With over 15 years of experience in a variety of settings from hospital dietetics through to research and corporate nutrition settings. Currently Pennie is Head of Health Coaching at Digital Wellness, and spokesperson for both Dietitians Australia and CSIRO Total Wellbeing Diet.
She works with clients of all ages, empowering them to achieve their nutrition and lifestyle goals – from addressing specific medical conditions, to general healthy eating advice for the whole family.
Keeping nutrition simple and practical, and sorting through the clutter of nutrition myths, Pennie shares her passion for nutrition with individual nutrition counselling, as well as regularly presenting at community and corporate events.
Being a mother of two young children, and having a passion for a healthy lifestyle, Pennie is motivated to inspire her clients to nurture, nourish and evolve.

To help people develop a healthy relationship with food, and improve their nutrition quality and lifestyle through nutrition counselling and habit change approaches.


Media Experience
Pennie has experience with delivering nutrition messages to consumers, corporate work spaces and professionals. This experience ranges from small group presentations in the work place to media interviews representing the CSIRO Total Wellbeing Diet with appearances such on Sunrise, Today and A Current Affair, along with print media like Body & Soul.
Having completed several media training courses, Pennie has the skills to present to various audience via a variety of media.

Meet Lauren
Nurture Nourish Evolve
Accredited Practising Dietitian
Lauren comes with a depth of knowledge, skills and experience. She is a qualified
Accredited Practicing Dietitian who supports her clients to make their health and lifestyle goals a reality. Lauren understands that there is no one-size-fits-all approach when it comes to improving nutrition. She takes the time to get to know her clients and what influences their behaviours so that interventions are tailored to their needs. This includes
helping her clients work through the barriers that may be holding them back from making positive change. Lauren helps her clients to break down their goals into smaller achievable steps that can be maintained long term, enabling her clients live healthier and happier lives.
Lauren has experience supporting patients living with chronic disease such as weight
management, diabetes, osteoarthritis, high blood pressure, high cholesterol, heart disease, chronic kidney disease and liver disease. In addition to supporting clients at Nurture Nourish Evolve, Lauren supports patients and their families within the hospital setting across a wide range of clinical areas.
Lauren completed her Masters of Nutrition and Dietetics at the University of Sydney
where she was awarded the Dean’s List of Excellence in Academic Performance. She is a published author in the Journal of Nutrition and Dietetics and has presented her research at the Dietitians Australia Conference 2021 and National Allied Health Conference 2021.
Lauren was a finalist for the South Eastern Sydney Local Health District Early Career
Allied Health Professional of the Year 2022.
In her spare time, you’ll find Lauren on a coastal walk, on the footy field or trying out new bars and restaurants with her friends.
